Fish Soup
A firm favourite in Ukraine. Fish has been used in traditional Ukrainian cuisine since ancient times.

Split Pea Soup
A mouth-watering and aromatic soup that can be made with either chicken or vegetable stock, please ask when ordering.
This dish is delicious, and pottage-like and consists of split peas, onion, carrot, parsnip, tomatoes, lemon and butter. This soup can be made vegan on request.

Ukrainian Borscht
This authentic red beetroot soup is famous all over the world and it is one of the unofficial symbols of Ukraine!
It has plenty of components and complicated cooking technology. Alongside the beetroot which gives it such a rich red colour, there is beef, potato, cabbage, onion, carrot, tomatoes, pepper, butter and lemon. Usually served with sour cream.

Ukrainian Mushroom Soup
Foraging for mushrooms is a very popular activity in Ukraine, and one of the best places to go is the Carpathian Mountains.
Valentyna’s recipe is based on the Carpathian recipe but includes one of her favourite vegetables, parsnips.
Other ingredients include onions, carrots, chicken or vegetable stock, cream and of course, plenty of mushrooms.

Olivier Potato Salad
A very popular holiday salad in Ukraine, especially for New Year. It is based on a recipe invented in 1860 by Belgian cook Lucien Olivier, but it has become a firm favourite in many Eastern European countries.
Made with fresh ingredients: potato, carrot, eggs, green peas, pickles, and mayonnaise.
Beef, chicken or ham can be added. Please ask.

Vinegret
A vibrant and nutritious Ukrainian beetroot salad prepared with fresh ingredients.
It takes some time to prepare with apple, beetroot, potato, carrot, green peas, onions, pickled cucumbers and olive oil, but well worth the wait!
Very refreshing and delicious. It is one of the few salads popular in Ukraine that does not contain mayonnaise!

Herring "under a fur coat"
An unusual and colourful layered salad, much loved in Ukraine, composed of diced pickled herring, potatoes, beetroots, carrots, onions, grated boiled eggs and mayonnaise.
The fur coat refers to the layers of vegetables and egg over the fish, with vibrant colours that make it look almost like a cake!
Cut into wedges and serve with rye bread for lunch.

Crab Salad "Ants Eggs"
A salad made with crab sticks, referred to in Ukraine by the unusual name of ant eggs. It is a mixture of crab sticks, butter, soft cheese, eggs, plenty of garlic, and mayonnaise.

Pidjarka - Ukrainian Goulash
A recipe full of flavour. Chunks of slow-cooked beef in a rich, tasty tomato-based sauce flavoured with onion, carrot and herbs. Delicious and served with soured cream. If thickening of sauce is need, Valentyna uses gf flour.

A very popular dish in Ukraine. Freshly prepared traditional pasta hand-filled with a choice of fillings suitable for meat eaters and vegetarians alike.

Pork with Garlic Sauce
For those of us who love garlic, Valentyna’s homemade recipe is a delight! Pork tenderloin, marinated in herby mayonnaise, rubbed with spices, salt and pepper, stuffed with slivers of carrot and garlic, and roasted in foil.
Served with a garlic sauce on the side. Delicious fresh from the oven with mashed or roasted potatoes, but also delicious served cold, with other cold meats or salad.

Ukrainian Pork Plov
This dish is similar to pilaf, made with rice, pork, carrot, onion, garlic and herbs, which is extremely popular in Ukraine.
Valentyna’s home-style dish is based on a recipe from Crimea and is her ultimate comfort food from Ukraine. Made ready to warm through, scoop into a bowl and enjoy. Delicious with a tomato salad and fresh sourdough bread.

Chicken Bitok
Another classic Ukrainian recipe made from fresh chicken breast, flattened and coated in flour, egg and a handful of spices, then fried until golden brown to create a deliciously tender meat component for your meal.
Garnish with spring onions and serve with tomato ketchup or another favourite dipping sauce.

A traditional treat loved by all Ukrainians. Made with sweet home-baked shortcrust dough, crumbled and mixed with raisins, hazelnuts, walnuts, peanuts and poppy seeds bound together with caramel. The poppy seeds depict ants crawling on the hill!

This is a real favourite with Ukrainians!
